These are referred to as the ”crus” of Cognac. Alize Cognacs are further distinguished in their use of the Folle Blanche grape, one of the oldest and rarest varieties in the Cognac vineyard. This variety lends lovely aromas of linden and violet to the brandies as well as generosity and longevity. Distilled in the only existing distillery in the heart of the town of Cognac, Alize Cognacs are matured in oak barrels from the Limousin region of France crafted by master coopers who have served our company from its beginning, and gently aged in our cellars on the banks of the Charente River. .

Leading international writers on beer and whisky have joined together in a unique project to celebrate the enduring legacy of celebrated drinks writer Michael Jackson (65), who died in August 2007 having suffered from Parkinson s disease for over a decade. They have each donated a piece of new writing to Beer Hunter, Whisky Chaser, launched on March 27, 2009 to mark Jackson s birth date. All proceeds from the publication, which was supported by leading single malt whisky The Glenlivet, will be donated to the Parkinson s Disease Society of the UK. Editor Ian Buxton, who conceived the project, said Michael Jackson dominated the world of both beer and whisky writing for two decades and was hugely influential in both real ale and single malt whisky. A complete generation of writers has cause to be grateful to him, not to mention countless brewers and distillers. This new book honours that legacy. This unique brew (Alc 5.2% vol) combines all the traditional qualities and style of a Charles Wells bitter with the subtle flavour of banana. Its flavour unfolds with a sensual sparkle and a smart crispness, which balances its aroma perfectly. Tropically fruity; its ripe banana flavour, emphasised by a hint of bitterness, comes from the addition of real fair trade bananas and finishes with an emphatic, steely dryness.

The U.S. Government Standards require ”rye whiskey” to be made from a mash of at least 51% rye grain. For Redemption Rye we use a mash of 95% premium rye grain for a spicy and bold flavor and we use premium rye, which costs more but is well worth it, because when you use good ingredients you get good rye whiskey.The U.S. Government Standards also require that rye whiskey be aged in ”new charred oak barrels” which means that new oak barrels are burned on the inside, and it’s from the charred wood and the expansion and contraction of the whiskey in and through the wood of the barrel through the seasons that whiskey gets its amber color and the flavor is smoothed. We bottle in small batches which allows us to leave the whiskey in the barrels longer for the most flavor and color. We empty the barrels and filter for particles, cut it down to 92 proof and bottle it immediately so that the most flavor from the barrel makes it into the bottle. We then mark each bottle with the batch and bottle number by hand.Then the bottles are packed into cases and shipped around to the country, and that’s the Redemption Rye process!
